30 days of pins: day 6

PANCAKE MUFFINS
a.k.a. "PUFFINS"

The process:
The directions in the caption read, "Busy Mom Puffins (Pancake Muffins) Preheat oven to 350, mix 1 c pancake mix, 2/3 c water, 1/2 c syrup. Mix together, pour in greased muffin pan. Top with banana, blueberries, chocolate chips, pecans, sausage, bacon....etc. Bake for 12-14 minutes and serve. Easy, fast, delicious & no syrupy mess!!
I followed the directions above making plain and chocolate chip versions. I baked them for 11 minutes in a paper-lined muffin tin. The batter looked really good and I wonder if you could just pour it out on a griddle for some baked-in syrup normal pancakes.

The change:
Since the photo above showed paper liners, I didn't bother to use oil spray. The muffins definitely stuck to the liners so next time I would opt to use spray. The picture also makes you think you need to add a ton of toppings. The muffins don't really rise so a little goes a long way.

The checkbook:
The ingredients called for are staples at our house.

The bottom line:
This is a yummy idea for jazzing up the typical pancake breakfast. I will definitely try them again and hopefully spraying the liners or tin directly will eradicate the sticking issue.
